GVA Day One Lunch!
Mashed avocado with red onion and cabbage with salt on corn tortillas with toasted pine nuts. The pine nuts were a little stale because they'd been in the cupboard too long. They were still good but if they were fresher it would be even better.
I was stuffed by the time I was done! Perhaps a goodly amount of roughage helped? I had a snack of some almonds, V8 Juice, and a square of chocolate.
OK, sometimes my posts may be a little mundane, but at least you have another lunch idea!

Yum! Sounds delicious. Since you are new to this, please remember to eat foods that are supplemented with vitamins (for example, soy milk with B12). And another thing to keep in mind is that some people experience detox effects after a few days of going vegan. I didn't have a problem when I switched, but my friend had a tummy ache for 2 days after a week of being veg. Not trying to scare you... just wanted you to know so you don't freak out if it does happen to you.

ReplyDeleteI don't know why anyone would ever do such a crazy thing as going vegan. I think vegans are just crazy people. But I guess they are kinda cool. And usually good-lookin. And they have hot bods. And really fresh breath. At least that's been my experience.
